Ingredients

  • 2 cups canned chickpeas rinsed and drained
  • ½ cup crumbled feta cheese
  • ⅓ cup dried cranberries
  • 1 cup chopped cucumber
  • ¼ cup diced red bell pepper
  • ¼ cup thinly sliced red onion
  • 2 tbsp chopped fresh parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp black pepper


Instructions

  1. Rinse and drain chickpeas and set aside.
  2. Chop cucumber bell pepper onion and parsley.
  3. In a small bowl whisk olive oil lemon juice salt and pepper to make the dressing.
  4. In a large bowl combine chickpeas veggies cranberries and feta.
  5. Pour dressing over the salad and toss gently to coat.
  6. Serve immediately or chill for 15–30 minutes before serving.
