Ingredients

  • 1 can chickpeas (15 oz) drained and rinsed
  • 1/2 cup crumbled feta cheese
  • 1/3 cup dried cranberries
  • 1 small cucumber sliced
  • 2 tbsp chopped fresh parsley
  • 1 tsp lemon zest
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Drain and rinse the chickpeas and let dry slightly.
