Ingredients

  • 8 rice paper wrappers
  • 1 block extra-firm tofu, sliced
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 1/2 cucumber, julienned
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves (optional)
  • 4 romaine lettuce leaves, halved
  • 1 cup cooked vermicelli noodles (optional)


Instructions

  1. Prepare all vegetables and tofu by slicing into thin strips.
  2. Fill a shallow dish with warm water and dip one rice paper wrapper for 5–10 seconds.
  3. Place wrapper on a damp towel. Layer romaine, tofu, carrots, peppers, cucumber, herbs, and noodles (if using).
  4. Fold sides in, then roll tightly from the bottom up. Repeat with remaining ingredients.
  5. Serve immediately with your favorite dipping sauce.

Notes

  • Don’t overfill the rolls to prevent tearing.
  • Use a second wrapper if one tears.
  • Store under damp paper towel to keep them fresh.
