Ingredients

  • 1 lb baby potatoes
  • 3 carrots
  • 2 zucchinis
  • 3 tbsp olive oil
  • 3 garlic cloves minced
  • 1 tsp dried Italian herbs
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat oven to 425°F and line a baking sheet.
  2. Cut baby potatoes in half, slice carrots and zucchinis into rounds.
  3. In a bowl, toss vegetables with olive oil, garlic, herbs, salt, and pepper.
  4. Spread vegetables on the sheet in a single layer.
