Ingredients
- 1 cup apple cider
- 1 1/2 cups all-purpose flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 eggs
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 apple, diced small
- Oil for frying
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp apple cider (for glaze)
Instructions
- Simmer apple cider in a saucepan until reduced by half. Set aside to cool.
- In a bowl, mix flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk reduced cider, milk, eggs, and vanilla extract.
- Combine wet and dry ingredients, then fold in diced apple.
- Heat oil to 350°F. Drop batter in small scoops and fry 2–3 minutes per side.
- Drain on paper towels or rack.
- Whisk glaze ingredients and drizzle or dip fritters while warm.
Notes
- Use tart apples like Granny Smith for flavor balance.
- Don’t overcrowd the fryer it cools the oil.
- For a thicker glaze, reduce the cider glaze liquid.
- Best served warm but can be reheated in the oven.
