Ingredients

  • 3 cups rotini pasta
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/4 red onion
  • 1/2 cup kalamata olives
  • 1/2 cup feta cheese
  • 2 tbsp fresh parsley
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/4 tsp black pepper


Instructions

  1. Boil pasta in salted water until al dente then drain and rinse under cold water.
  2. Slice cucumber and cherry tomatoes and thinly slice red onion.
  3. Whisk olive oil, lemon juice, oregano, and black pepper to make the dressing.
  4. Add pasta and vegetables to a large bowl and toss to combine.
  5. Top with crumbled feta and chopped parsley.
  6. Gently toss again and chill before serving if desired.
