Ingredients

  • 1.5 lbs baby potatoes
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/4 red onion
  • 1/2 cup kalamata olives
  • 1/3 cup feta cheese
  • 2 tbsp chopped parsley
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano


Instructions

  1. Boil baby potatoes until just tender then drain.
  2. Roast potatoes in the oven with olive oil at 400°F until golden.
