Ingredients
- 2 cups green beans
- 1 can tuna (5 oz)
- 1 cup cherry tomatoes
- 1/4 red onion
- 1/3 cup green olives
- 2 tbsp chopped parsley
- 3 tbsp olive oil
- 1 tbsp lemon juice
- Lemon wedges (for garnish)
- Salt and pepper to taste
Instructions
- Boil green beans for 2–3 minutes then transfer to ice water.
- Drain and break tuna into chunks.
- Slice cherry tomatoes and red onion.
- In a small bowl whisk olive oil, lemon juice, salt, and pepper.
- Combine beans, tuna, tomatoes, onion, and olives in a large bowl.
- Pour dressing over and toss gently to coat.
- Garnish with parsley and lemon wedges and serve.
