Ingredients

  • 2 cups green beans
  • 1 can tuna (5 oz)
  • 1 cup cherry tomatoes
  • 1/4 red onion
  • 1/3 cup green olives
  • 2 tbsp chopped parsley
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • Lemon wedges (for garnish)
  • Salt and pepper to taste


Instructions

  1. Boil green beans for 2–3 minutes then transfer to ice water.
  2. Drain and break tuna into chunks.
  3. Slice cherry tomatoes and red onion.
  4. In a small bowl whisk olive oil, lemon juice, salt, and pepper.
  5. Combine beans, tuna, tomatoes, onion, and olives in a large bowl.
  6. Pour dressing over and toss gently to coat.
  7. Garnish with parsley and lemon wedges and serve.
