Ingredients

  • 2 boneless chicken breasts
  • 2 cups cooked white rice
  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • 1 garlic clove minced
  • 1 tbsp soy sauce
  • 1/4 cup Greek yogurt or mayo
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and black pepper to taste


Instructions

  1. Mix olive oil, garlic, soy sauce, salt, and pepper in a bowl and marinate chicken for at least 15 minutes.
  2. Grill chicken for 5–6 minutes per side until fully cooked, then let rest and slice.
  3. Steam broccoli florets until tender-crisp, about 4–5 minutes.
  4. In a small bowl, whisk Greek yogurt or mayo, Dijon mustard, lemon juice, salt, and pepper to make the sauce.
  5. Divide rice into bowls and top with sliced chicken and broccoli.
