Ingredients

  • 1 zucchini (sliced)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 cup mushrooms
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 tortilla wraps
  • 1/2 cup hummus
  • 2 tbsp chopped parsley


Instructions

  1. Slice all vegetables and toss with olive oil, salt, and pepper.
  2. Grill veggies for 2–4 minutes per side until charred and tender.
  3. Warm tortillas briefly on grill or pan until soft.
  4. Spread hummus on each wrap.
  5. Layer grilled veggies on top and sprinkle with parsley.
  6. Roll wraps tightly and slice in half to serve.
