Ingredients
- 1 zucchini (sliced)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 1 cup mushrooms
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 tortilla wraps
- 1/2 cup hummus
- 2 tbsp chopped parsley
Instructions
- Slice all vegetables and toss with olive oil, salt, and pepper.
- Grill veggies for 2–4 minutes per side until charred and tender.
- Warm tortillas briefly on grill or pan until soft.
- Spread hummus on each wrap.
