Description

This easy one-skillet dinner is a quick and healthy idea for any night! Loaded with ground beef zucchini and sweet potato it’s the best simple combo!


Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and cubed
  • 2 zucchinis, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Chopped parsley, for garnish


Instructions

  1. Peel and cube the sweet potatoes. Slice zucchini into half-moons. Dice onion and mince garlic.
  2. In a large skillet, heat 1 tbsp olive oil over medium heat. Cook the ground beef until browned, breaking it apart. Remove and set aside.
  3. In the same skillet, add remaining olive oil. Sauté onion and garlic for 1–2 minutes.
  4. Add sweet potatoes, paprika, salt, and pepper. Cover and cook for 10–12 minutes until tender, stirring occasionally.
  5. Add zucchini and cook for another 4–5 minutes until slightly tender.
  6. Return cooked beef to skillet and stir everything together. Cook for 2 more minutes until warmed through.
  7. Garnish with fresh parsley and serve hot.
