Ingredients

  • 2 grilled chicken breasts sliced
  • 1/2 cup BBQ sauce
  • 1 can chickpeas drained and rinsed
  • 1 cup canned corn or fresh
  • 1 cup black beans drained and rinsed
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1/4 cup diced red onion
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste


Instructions

  1. Slice grilled chicken and coat with BBQ sauce.
  2. Drain and rinse chickpeas and black beans and pat dry.
  3. Chop romaine lettuce, tomatoes, and red onion.
  4. In a bowl combine lettuce, chickpeas, corn, beans, tomatoes, and onion.
  5. Top with BBQ chicken slices.
  6. Drizzle more BBQ sauce or a mix of olive oil and lemon juice.
  7. Toss gently and serve cold.
