Ingredients
- 1 can chickpeas (rinsed and drained)
- 1/4 cup nut butter (like almond or peanut)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/4 cup cocoa powder
- 1/3 cup dark chocolate chips (melted)
- 1/8 tsp salt
- 2 tbsp cocoa powder (for rolling)
Instructions
- Add chickpeas, nut butter, maple syrup, vanilla, cocoa powder, and salt to a food processor.
- Blend until smooth, scraping down the sides as needed.
- Melt chocolate chips and add to the processor. Blend again until combined.
- Chill the mixture for 20 minutes in the fridge.
- Roll into small balls and coat with cocoa powder.
- Store in an airtight container in the fridge or freezer.
