Ingredients
- 1/2 cup pumpkin puree
- 1 1/4 cups almond flour

- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- Pinch of sea salt
Instructions
- In a mixing bowl, combine pumpkin puree, almond flour, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of sea salt. Stir until smooth.
- Scoop and roll the mixture into small balls, then place on a parchment-lined baking sheet. Chill for 30 minutes.
- Melt chocolate chips and coconut oil in a microwave or double boiler until smooth.
- Dip each truffle in the melted chocolate, allowing excess to drip off. Place back on the tray.
