Ingredients
- 2 cups rolled oats
- 1 cup whole wheat flour
- 1/2 cup brown sugar or coconut sugar
- 1/2 cup melted butter or coconut oil
- 2 cups fresh strawberries, chopped
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F and line baking pan with parchment paper.
- Mix oats, flour, sugar, and melted butter until crumbly. Reserve 1 cup for topping.
- Press remaining mixture into the bottom of the pan.
- Cook strawberries with lemon juice, sugar, and cornstarch until thickened.
- Spread filling over crust and sprinkle reserved oat mixture on top.
- Bake 30–35 minutes, cool completely, then cut into squares.
