Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar or coconut sugar
  • 1/2 cup melted butter or coconut oil
  • 2 cups fresh strawberries, chopped
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F and line baking pan with parchment paper.
  2. Mix oats, flour, sugar, and melted butter until crumbly. Reserve 1 cup for topping.
  3. Press remaining mixture into the bottom of the pan.
  4. Cook strawberries with lemon juice, sugar, and cornstarch until thickened.
  5. Spread filling over crust and sprinkle reserved oat mixture on top.
  6. Bake 30–35 minutes, cool completely, then cut into squares.
