Ingredients
- 250 g spaghetti or pasta of choice
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, sliced into ribbons
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, torn
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta in salted water until al dente, reserve some pasta water, then drain.
- Heat olive oil in skillet, sauté garlic for 1 minute.
- Add cherry tomatoes, cook until they start to burst.
- Add zucchini and cook for 2–3 minutes until just tender.
- Toss in cooked pasta, add reserved water as needed.
- Season with salt and pepper, add Parmesan and basil.
