Ingredients

  • 250 g spaghetti or pasta of choice
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced into ribbons
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Cook pasta in salted water until al dente, reserve some pasta water, then drain.

  3. Add cherry tomatoes, cook until they start to burst.
  4. Add zucchini and cook for 2–3 minutes until just tender.
  5. Toss in cooked pasta, add reserved water as needed.
  6. Season with salt and pepper, add Parmesan and basil.
  7. Gently toss and serve warm.
