Ingredients
- 2 pounds baby potatoes
- 1/2 cup plain Greek yogurt
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 2 tbsp fresh dill chopped
- 2 tbsp parsley chopped
- 1 tbsp chives chopped
- Salt and pepper to taste
Instructions
- Wash and halve the baby potatoes. Boil in salted water until fork-tender, about 12-15 minutes.
- Drain and let cool slightly.
- Whisk Greek yogurt, olive oil, lemon juice, Dijon mustard, salt, and pepper in a bowl.
- Stir in chopped dill, parsley, and chives.
- Gently toss warm potatoes with the yogurt dressing until well coated.
- Taste and adjust seasoning if needed.
- Chill or let sit for 20 minutes before serving.
