Description

Ingredients

  • 2 pounds baby potatoes
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 tbsp fresh dill chopped
  • 2 tbsp parsley chopped
  • 1 tbsp chives chopped
  • Salt and pepper to taste


Instructions

  1. Wash and halve the baby potatoes. Boil in salted water until fork-tender, about 12-15 minutes.
  2. Drain and let cool slightly.
  3. Whisk Greek yogurt, olive oil, lemon juice, Dijon mustard, salt, and pepper in a bowl.
  4. Stir in chopped dill, parsley, and chives.
  5. Gently toss warm potatoes with the yogurt dressing until well coated.
  6. Taste and adjust seasoning if needed.
  7. Chill or let sit for 20 minutes before serving.
