Ingredients
- 1 lb boneless chicken thighs or breasts, chopped
- 2 cups cooked rice (cold)
- 2 eggs
- 3 garlic cloves, thinly sliced
- 1/2 cup diced carrots
- 1/2 cup green peas
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 tbsp cornstarch
- Salt and pepper to taste
- Green onions for garnish
- Oil for frying
Instructions
- Season chicken with salt, pepper, soy sauce, and coat in cornstarch.
- Heat oil in skillet and fry garlic slices until golden. Remove and set aside.
- Fry chicken until crispy and cooked through. Set aside.
- Scramble eggs in the same pan, then set aside.
- Add rice, carrots, and peas to skillet. Stir-fry for 3–4 minutes.
- Add soy sauce, sesame oil, and mix in eggs.
- Top with crispy chicken and garlic chips. Garnish with green onions and serve hot.
