Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 garlic cloves minced
  • 1/4 cup onion finely chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 yellow bell pepper chopped
  • 2 cups cooked rice
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 2 tbsp ketchup
  • 1 tbsp vinegar
  • 1 tbsp cornstarch
  • 1 tbsp olive oil


Instructions

  1. Mix ground beef breadcrumbs egg garlic and onion in a large bowl.
  2. Form into small meatballs and set aside.
  3. Brown the meatballs in a skillet with olive oil until golden but not fully cooked.
  4. In a saucepan whisk honey soy sauce ketchup vinegar and garlic. Stir in cornstarch and simmer until thickened.
  5. In a greased baking dish layer rice and chopped peppers.
  6. Place browned meatballs over the rice and pour sauce evenly over everything.
  7. Cover with foil and bake at 375°F for 25 minutes.
  8. Remove foil and bake an additional 10 minutes until bubbly and caramelized.
