Ingredients
- 1/2 lb ground Italian sausage
- 1 cup shredded mozzarella cheese
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 2 large eggs
- 1/2 cup milk
- 1/4 cup olive oil
- 1/4 cup pizza sauce
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 2 tbsp grated Parmesan cheese
Instructions
- Preheat oven to 375°F and grease muffin tin.
- Cook Italian sausage in skillet until browned, then set aside to cool.
- Mix flour, baking powder, oregano, and garlic powder in a bowl.
- In another bowl, whisk eggs, milk, olive oil, and pizza sauce.
- Combine wet and dry ingredients, stirring until just mixed.
- Fold in sausage and most of the mozzarella cheese.
- Divide batter into muffin cups, filling 3/4 full.
- Top each with remaining mozzarella and sprinkle with Parmesan.
- Bake for 18–22 minutes or until golden and cooked through.
- Cool 5 minutes in tin, then transfer to wire rack.
