Ingredients

  • 3 cups cooked rice (preferably day-old)
  • 1 lb chicken breast cut into bite-sized pieces
  • 1/3 cup Japanese BBQ sauce
  • 1 cup diced carrots
  • 1 cup green peas
  • 3 green onions chopped
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste


Instructions

  1. Toss chicken pieces in Japanese BBQ sauce.
  2. Cook chicken in a skillet until browned and fully cooked then set aside.
  3. Add sesame oil to the skillet sauté carrots until tender then add peas.
  4. Stir in rice breaking up clumps and season with soy sauce salt and pepper.
  5. Return chicken to skillet and toss to combine with rice and vegetables.
  6. Garnish with green onions and serve hot.
