Ingredients
- 3 cups cooked rice (preferably day-old)
- 1 lb chicken breast cut into bite-sized pieces
- 1/3 cup Japanese BBQ sauce
- 1 cup diced carrots
- 1 cup green peas
- 3 green onions chopped
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- Toss chicken pieces in Japanese BBQ sauce.
- Cook chicken in a skillet until browned and fully cooked then set aside.
- Add sesame oil to the skillet sauté carrots until tender then add peas.
- Stir in rice breaking up clumps and season with soy sauce salt and pepper.
- Return chicken to skillet and toss to combine with rice and vegetables.
- Garnish with green onions and serve hot.
