Ingredients

  • 1 lb ground chicken
  • 1 egg
  • 1/3 cup breadcrumbs
  • 1/4 cup grated onion
  • 1/2 tsp garlic powder
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cups mashed potatoes (for serving)
  • 1 1/2 cups mixed vegetables (peas and carrots)
  • 1 tbsp chopped parsley (optional)


Instructions

  1. In a bowl, mix ground chicken, egg, breadcrumbs, onion, garlic powder, parsley, salt, and pepper.
  2. Form mixture into small patties using hands or a scoop.
  3. Heat olive oil in a nonstick skillet over medium heat.
  4. Cook patties 4–5 minutes per side until golden and fully cooked through.
  5. Warm the mashed potatoes and mixed vegetables.
  6. Plate mashed potatoes, top with patties, and sprinkle veggies and parsley on top.

Notes

  • Add shredded zucchini or carrot to the patties for hidden veggies.
  • Freeze cooked patties for easy future meals.
  • Turn them into sliders with mini buns for a fun twist.
