Ingredients
- 1 lb ground beef
- 1 egg
- 1/3 cup panko breadcrumbs
- 2 garlic cloves, minced
- 2 green onions, chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 2 cups broccoli florets
- 2 cups sliced carrots
- 1 tbsp olive oil
- 1 tbsp sesame seeds
- For the BBQ sauce:
- 3 tbsp soy sauce
- 1 ½ tbsp gochujang
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 garlic clove, minced
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Toss broccoli and carrots with olive oil and a pinch of salt.
- Mix ground beef, egg, breadcrumbs, garlic, green onion, sesame oil, and soy sauce.
- Form into 1½ inch meatballs and place on one side of the sheet. Spread veggies on the other side.
- Bake for 20–22 minutes until meatballs are cooked and veggies are tender.
- In a saucepan, simmer BBQ sauce ingredients for 5–7 minutes until thickened.
- Toss meatballs in sauce and coat well.
- Serve over roasted veggies and sprinkle with sesame seeds and more green onion if desired.

- Add red pepper flakes for extra heat.
- Use ground chicken or turkey as a lighter alternative.
