Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup cold unsalted butter
  • 8 oz cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F and line an 8×8 pan with parchment paper.
  2. Mix flour, granulated sugar, brown sugar, and salt, then cut in cold butter until crumbly.
  3. Press 2/3 of the mixture into the pan and bake for 10 minutes.
  4. Beat cream cheese until smooth, then add sugar, egg, lemon juice, zest, and vanilla.
  5. Spread filling over the crust and top with remaining crumbs.
  6. Bake 25–30 minutes until center is set and topping is golden.
  7. Cool completely, chill for 2 hours, then slice into bars.
