Ingredients
- 1/2 pound shrimp, cooked and peeled
- 1 avocado, cubed
- 1 cup cherry tomatoes, halved
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons lemon juice

- Salt and black pepper to taste
Instructions
- Bring a pot of salted water to a boil, add shrimp, and cook 2–3 minutes until pink and opaque. Drain and rinse under cold water.
- Halve cherry tomatoes and cube avocado.
- Chop parsley finely.
- In a bowl, whisk lemon juice, olive oil, salt, and pepper.
- Add shrimp, tomatoes, avocado, and parsley to bowl and toss gently.
- Transfer to plate and sprinkle extra parsley and black pepper.
