This loaded potato taco bowl is one of the best easy weeknight dinner ideas! Hearty fun and full of flavor it’s a quick simple healthy meal!
Ingredients
- 1 ½ lbs baby potatoes, halved
- 1 tbsp olive oil
- 1 lb ground beef
- 1 tbsp taco seasoning
- 1 cup canned black beans, drained
- 1 cup corn
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- ½ cup shredded cheddar cheese
- ¼ cup sour cream
- 2 green onions, chopped
- Salt and pepper, to taste
Instructions
- Preheat oven to 425°F. Toss halved potatoes with olive oil, salt, pepper, and some taco seasoning. Roast for 25–30 minutes until crispy.
- Cook ground beef in a skillet over medium heat until browned. Add taco seasoning, beans, and corn. Simmer for 5 minutes.
- Prepare toppings: slice avocado, halve cherry tomatoes, chop green onions.
- Layer bowls starting with roasted potatoes. Add the beef and bean mix on top.
- Top with cheese, sour cream, avocado, tomatoes, and green onions.
- Serve warm and enjoy!

- Use sweet potatoes for a twist.
- Add hot sauce or jalapeños for spice.
