Ingredients
- 1.5 lbs baby potatoes, halved
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 3 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup crumbled cotija or feta cheese
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 425°F. Halve potatoes and slice peppers and onion.
- Toss all vegetables in olive oil and spices in a large bowl.
- Spread on a baking sheet in a single layer. Roast for 25–30 minutes, tossing halfway through.
- Remove from oven, top with cheese and cilantro. Toss lightly and serve warm.

- Use sweet potatoes for a twist.
- Top with jalapeños or hot sauce for more heat.
