Ingredients
- 1 cup peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup peanut butter (for filling)
- 3/4 cup powdered sugar (for filling)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream peanut butter, butter, brown sugar, and granulated sugar until fluffy.
- Add egg and vanilla; mix until combined.
- Stir in flour, baking soda, and salt until a dough forms.
- Roll dough into balls and place on baking sheet. Flatten with a fork in a crisscross pattern.
- Bake for 8–10 minutes or until edges are set. Cool on pan for 5 minutes, then transfer to wire rack.
- In a small bowl, mix peanut butter and powdered sugar for the filling.
- Once cookies are cooled, spread filling on one and sandwich with another.
