- 1 tbsp rice vinegar
- ¼ cup pineapple juice (reserved from can)
- 1 tbsp cornstarch
- 2 tbsp water (for slurry)
- Cooked white or brown rice, for serving
- Chopped green onions, optional
Instructions
- Heat olive oil in a skillet over medium-high heat and cook diced chicken until golden and cooked through.
- Add red bell pepper and garlic, cook for 2–3 minutes until slightly softened.
- In a bowl, mix soy sauce, brown sugar, rice vinegar, and pineapple juice. Pour into skillet and stir.
- Make a cornstarch slurry with cornstarch and water. Stir into the skillet and cook until sauce thickens.
- Gently stir in pineapple chunks and heat for another 1–2 minutes.
- Serve hot over cooked rice and garnish with green onions if desired.
