Ingredients

  • 1 can (20 oz) crushed pineapple, well drained
  • 2 1/2 cups vanilla wafer crumbs
  • 1 cup sweetened condensed milk
  • 1/4 cup unsalted butter, softened
  • 1 cup shredded coconut
  • 1/2 cup extra shredded coconut (for rolling)


Instructions

  1. Drain the crushed pineapple well to remove excess liquid.
  2. In a bowl, mix pineapple, vanilla wafer crumbs, condensed milk, butter, and 1 cup shredded coconut until combined.
  3. Chill the mixture for 30 minutes to firm it up.
  4. Roll into small balls using your hands or a scoop.
  5. Roll each ball in extra shredded coconut to coat.
  6. Chill for another 30 minutes before serving or storing.

  • Drain pineapple thoroughly for best texture.
  • Add more cookie crumbs if mixture is too wet.
