Ingredients
- 1 can (20 oz) crushed pineapple, well drained
- 2 1/2 cups vanilla wafer crumbs
- 1 cup sweetened condensed milk
- 1/4 cup unsalted butter, softened
- 1 cup shredded coconut
- 1/2 cup extra shredded coconut (for rolling)
Instructions
- Drain the crushed pineapple well to remove excess liquid.
- In a bowl, mix pineapple, vanilla wafer crumbs, condensed milk, butter, and 1 cup shredded coconut until combined.
- Chill the mixture for 30 minutes to firm it up.
- Roll into small balls using your hands or a scoop.
- Roll each ball in extra shredded coconut to coat.
- Chill for another 30 minutes before serving or storing.

- Drain pineapple thoroughly for best texture.
- Add more cookie crumbs if mixture is too wet.
