Ingredients

  • 2 medium zucchinis

  • 1/4 cup mini pepperoni or other toppings
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Chopped fresh parsley (optional)


Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Slice zucchini into 1/2-inch rounds. Brush with olive oil and sprinkle with Italian seasoning.
  3. Roast for 8–10 minutes until slightly tender.
