Ingredients

  • 1 cup pumpkin puree
  • 1 and 3/4 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • Optional cereal or streusel topping


Instructions

  1. Preheat oven to 350°F and line muffin tin with paper liners.
  2. In a bowl, whisk pumpkin puree, eggs, brown sugar, granulated sugar, oil, and milk until smooth.
  3. In another bowl, mix flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt.
  4. Add dry ingredients to wet mixture and stir until just combined.
  5. Fill muffin cups 3/4 full and top with optional cereal or streusel.
  6. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  7. Cool in pan for 5 minutes then transfer to a wire rack to finish cooling.

  • Don’t overmix the batter to keep muffins light.
  • Swap oil for applesauce for a healthier version.
