Ingredients
- 4 salmon fillets
- 1 cup orzo pasta
- 1 lemon (juice and zest)
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
- 1/2 cup diced tomatoes (optional)
Instructions
- Season salmon with salt and pepper. Heat oil in a skillet and sear salmon skin-side down for 3–4 minutes per side. Remove and set aside.
- In the same skillet, add more oil if needed and sauté onion until soft. Add garlic and cook for 1 more minute.
- Stir in orzo and toast for 1 minute. Add chicken broth and bring to a simmer. Cook uncovered for 10 minutes or until orzo is tender.
- Add lemon juice, zest, and diced tomatoes. Stir and heat through. Season as needed.
- Return salmon to skillet and heat through. Garnish with parsley and serve warm.
