Description

This easy shrimp asparagus carbonara is creamy quick and healthy a simple pasta dinner idea perfect for weeknights or date nights!


Ingredients

  • 8 oz spaghetti or linguine
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/2 lb shrimp, peeled and deveined
  • 1 cup asparagus, cut into 2-inch pieces
  • 3 egg yolks
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Pinch of red pepper flakes (optional)


Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water and drain.
  2. In a skillet, heat olive oil and sauté garlic, then add shrimp and asparagus. Cook until shrimp is pink and asparagus is tender.
  3. In a bowl, whisk together egg yolks, Parmesan, salt, and pepper.
  4. Return drained hot pasta to pot off heat. Quickly stir in egg mixture, adding pasta water gradually until creamy.
  5. Fold in shrimp and asparagus. Toss well to coat everything evenly.
  6. Serve warm with extra Parmesan and red pepper flakes if desired.

  • Use freshly grated Parmesan for best flavor and meltability.
  • Don’t add eggs over direct heat to avoid scrambling.
  • Substitute asparagus with peas or spinach if preferred.
