Description
This easy shrimp asparagus carbonara is creamy quick and healthy a simple pasta dinner idea perfect for weeknights or date nights!
Ingredients
- 8 oz spaghetti or linguine
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 lb shrimp, peeled and deveined
- 1 cup asparagus, cut into 2-inch pieces
- 3 egg yolks
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Pinch of red pepper flakes (optional)
Instructions
- Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water and drain.
- In a skillet, heat olive oil and sauté garlic, then add shrimp and asparagus. Cook until shrimp is pink and asparagus is tender.
- In a bowl, whisk together egg yolks, Parmesan, salt, and pepper.
- Return drained hot pasta to pot off heat. Quickly stir in egg mixture, adding pasta water gradually until creamy.
- Fold in shrimp and asparagus. Toss well to coat everything evenly.
- Serve warm with extra Parmesan and red pepper flakes if desired.

- Use freshly grated Parmesan for best flavor and meltability.
- Don’t add eggs over direct heat to avoid scrambling.
- Substitute asparagus with peas or spinach if preferred.
