Ingredients

  • 12 oz shrimp, peeled and deveined
  • 8 oz pasta (fettuccine or linguine)
  • 1 bunch asparagus, trimmed and cut
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • 2 cloves garlic, minced
  • Salt and black pepper to taste


Instructions

  1. Boil salted water and cook pasta until al dente.
  2. Trim asparagus and cut into bite-sized pieces.
  3. Add asparagus to the pot during the last 2 minutes of pasta cooking.
  4. Drain pasta and asparagus and set aside.
  5. Heat olive oil in a large skillet and sauté garlic until fragrant.
  6. Add shrimp and cook until pink and opaque, about 2-3 minutes per side.
  7. Add pasta and asparagus to the skillet and toss to coat.
  8. Add cherry tomatoes and toss gently to warm through.
  9. Remove from heat, add lemon juice and parsley, toss again.
  10. Season with salt and pepper, then serve warm or at room temperature.
