Description

Looking for easy summer dessert ideas? These s’mores cookie bars are quick simple and packed with healthy s’mores flavor! With chewy graham cookie layers melty chocolate and gooey marshmallows these bars are the best treat for BBQs parties or campfire nights!


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups milk chocolate chips
  • 2 cups mini marshmallows
  • 1/4 cup melted chocolate (for drizzle)


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
  2. Mix graham crumbs, flour, baking soda, and salt. Cream butter and sugars, then add egg and vanilla. Combine with dry ingredients to form dough.
  3. Press 2/3 of the dough into pan and bake for 8–10 minutes.
  4. Top with chocolate chips, spread melted chocolate, then layer marshmallows.
  5. Crumble remaining dough over marshmallows. Bake 10–12 minutes more until golden and gooey.
  6. Cool completely, drizzle with melted chocolate, and slice into bars.

Notes

  • Chill before slicing for clean cuts.
  • Use broiler or kitchen torch for extra toasty marshmallows.
  • Bars can be frozen for up to 1 month.
  • Try using dark or semi-sweet chocolate for a richer flavor.
