Ingredients

  • 12 oz spaghetti
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)


Instructions

  1. Cook spaghetti in salted water until al dente. Drain and reserve 1/2 cup pasta water.
  2. In a large skillet, heat olive oil and sauté garlic until fragrant.
  3. Add chopped sun-dried tomatoes and cook for 1–2 minutes.
  4. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan until melted.
  5. Add spinach and stir until wilted.
  6. Add cooked spaghetti and toss everything together, adding reserved pasta water as needed.
  7. Season with salt, pepper, and red pepper flakes if desired. Serve warm with extra cheese.
