Ingredients
- 1 cup quinoa, cooked and cooled
- 1 can chickpeas, drained and rinsed
- 1 cucumber, chopped
- 1/4 red onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup feta cheese, crumbled
- 1/3 cup pistachios, chopped
- 1/4 cup lemon juice
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook quinoa and let cool completely.
- Chop cucumber, onion, parsley, and mint.
- Whisk lemon juice, olive oil, salt, and pepper in small bowl.
- In large bowl, combine quinoa, chickpeas, cucumber, onion, herbs, feta, and pistachios.
