Ingredients

  • 1 cup quinoa, cooked and cooled
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, chopped
  • 1/4 red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup pistachios, chopped
  • 1/4 cup lemon juice
  • 3 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Cook quinoa and let cool completely.
  2. Chop cucumber, onion, parsley, and mint.
  3. Whisk lemon juice, olive oil, salt, and pepper in small bowl.
  4. In large bowl, combine quinoa, chickpeas, cucumber, onion, herbs, feta, and pistachios.
  5. Pour dressing over and toss until fully mixed.
  6. Serve immediately or chill before serving.

Notes

  • Add garlic or chili flakes for extra flavor.
  • Swap pistachios for other nuts if preferred.
  • Even better the next day after flavors meld.
