  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 4 oz cream cheese
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (for topping)
  • 1/4 cup chopped cilantro (for garnish)
  • 1/4 cup chopped green onions (for garnish)


Instructions

  1. Heat oil in a large pot over medium heat. Add onion and cook until soft. Stir in garlic and cook 30 seconds.
  2. Add cumin, coriander, and green chilies. Stir and cook briefly to toast spices.
  3. Pour in chicken broth, add chicken, beans, and corn. Stir and bring to a simmer.
