Ingredients

  • 2 cups fresh or frozen blueberries
  • 2 cups old-fashioned oats
  • 1 cup whole wheat or all-purpose flour
  • 1/2 cup honey or maple syrup
  • 1/2 cup coconut oil or melted butter
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F and line 8×8-inch baking dish with parchment paper.
  2. Mix oats, flour, cinnamon, and salt in a bowl.
  3. Add coconut oil, honey, and vanilla; stir to form crumbly dough.
  4. Set aside 1/3 for topping; press remaining into dish base.
  5. Toss blueberries with lemon juice and extra honey if needed.
  6. Spread blueberry mixture over crust.
  7. Crumble reserved oat mixture on top.
  8. Bake 30–35 minutes until golden and bubbly.
  9. Cool completely before slicing and serving.
