Sweet and Spicy Baked Cauliflower came into my kitchen on a chilly afternoon when I was craving something warm bold and just a bit indulgent without going off track. I had a head of cauliflower sitting on the counter and decided to give it a makeover using my favorite combination of honey and hot sauce.

The magic happened the moment I pulled it from the oven. The edges were perfectly crisp the glaze was sticky and fragrant and each bite had a satisfying balance of heat and sweetness. It’s now my go-to when I want a fun flavorful dish that also happens to be plant-based and crowd-pleasing.
Ingredients
- Here’s what I use for this recipe. You can always make substitutions if you prefer!
- Cauliflower – The hearty base that crisps up beautifully when baked
- Olive oil – Helps the cauliflower roast to golden perfection
- Cornstarch – Gives the florets a slightly crunchy coating
- Garlic powder – Adds depth and savory flavor
- Honey – Brings in a sweet sticky glaze
- Hot sauce – Adds heat and spice to balance the sweetness
- Soy sauce – Gives a savory umami richness to the glaze
- Apple cider vinegar – Brightens up the sauce with acidity
- Green onions – Fresh garnish for a pop of color and bite
Tools You’ll Need
- Baking sheet – For spreading out the cauliflower to ensure even roasting
- Mixing bowls – For tossing the cauliflower and combining sauce ingredients
- Whisk – To blend the glaze until smooth and shiny
- Parchment paper – Helps with easy cleanup and prevents sticking
- Oven – Of course for that beautiful roast finish

Instructions
Step 1:
I preheat the oven to 425°F and line a baking sheet with parchment paper.
Step 2:
I cut the cauliflower into bite-sized florets and toss them in a large bowl with olive oil cornstarch and garlic powder until they’re well coated.
Step 3:
I spread the cauliflower out on the baking sheet making sure they’re in a single layer and bake for about 25 minutes until they start to brown at the edges.
Step 4:
While the cauliflower roasts I whisk together honey hot sauce soy sauce and apple cider vinegar in a small bowl to make the glaze.
Step 5:
I take the cauliflower out of the oven and toss it with the sauce making sure every piece is evenly coated.
Step 6:
I return the sauced cauliflower to the oven for another 10–15 minutes letting the glaze thicken and caramelize slightly.
Step 7:
Once they’re out of the oven I sprinkle chopped green onions on top and serve them warm.

For extra crispy results I sometimes broil the cauliflower for the last 2 minutes. If I want to keep it vegan I swap the honey for maple syrup. And when I want more heat I add a pinch of red pepper flakes to the glaze.
