Instructions
Step 1:
I start by steaming the broccoli until it’s just tender then I let it cool slightly and chop it into tiny bits so it mixes smoothly.

In a large mixing bowl I combine the chopped broccoli cheddar parmesan breadcrumbs eggs garlic powder onion powder salt and pepper.
Step 3:
I mix everything together until it forms a slightly sticky cohesive mixture that can be easily shaped.
Step 4:
Using a cookie scoop or just my hands I roll the mixture into balls about the size of a golf ball and place them onto a parchment-lined baking sheet.
Step 5:
I preheat the oven to 400°F and once it’s ready I bake the balls for 22 to 25 minutes or until they’re golden brown on the outside and firm to the touch.
Step 6:
When they’re done I let them cool for a few minutes before serving they firm up more as they rest and are easier to pick up and dip.

If I want an extra crispy texture I sometimes spray the tops lightly with oil before baking. You can swap the cheddar for mozzarella or pepper jack if you like a spicier version and if the mixture feels too wet I just add a bit more breadcrumbs until it holds better.
