Ingredients

  • 2 chicken breasts, cut into cubes
  • 1 bell pepper, cut into chunks
  • 1/3 cup BBQ sauce
  • 4 cups romaine or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn (fresh or canned)
  • 1/2 cup black beans, drained and rinsed
  • 1/3 cup shredded cheddar cheese
  • 2 tbsp ranch dressing
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Toss chicken cubes with olive oil, salt, and pepper.
  2. Thread chicken and bell pepper pieces onto skewers.

  4. Brush BBQ sauce on skewers during last few minutes of grilling.

  6. Top with grilled skewers and drizzle with ranch and extra BBQ sauce.
