Ingredients

  • 4 cups cooked rice (cold)
  • 1 lb chicken breast, diced
  • 2 carrots, diced
  • 1 cup green peas
  • 2 eggs, lightly beaten
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Prep all ingredients: dice carrots, chop green onions, cut chicken, and beat eggs.
  2. Heat sesame oil in a large skillet or wok over medium-high heat. Cook chicken with salt and pepper until golden and cooked through. Remove and set aside.
  3. In the same pan, scramble eggs until just set. Push to the side.
  4. Add carrots and peas, cook until tender. Stir in garlic and cook 30 seconds.
  5. Add rice and chicken back to pan. Drizzle in soy sauce and stir everything together until hot and evenly coated.
  6. Mix in most green onions, save some for garnish. Adjust seasoning as needed and serve hot.
