Ingredients

  • 1 lb ground chicken
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated onion
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 tbsp olive oil (for cooking)
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil (for sauce)
  • 1 tbsp chopped dill or mint


Instructions

  1. In a bowl, mix ground chicken with garlic, parsley, onion, cumin, paprika, salt, and pepper.
  2. Shape into ovals and press onto skewers (or shape into patties).
  3. Heat olive oil in a skillet over medium heat and cook koftas 3–4 minutes per side until golden and cooked through.
  4. In a separate bowl, mix Greek yogurt, lemon juice, olive oil, dill/mint, salt, and pepper.
  5. Serve koftas warm with the creamy yogurt sauce and garnish with herbs.
