Ingredients

  • 2 flatbreads or naan
  • 1 cup cooked chickpeas
  • 2 cups fresh spinach
  • 2 garlic cloves, minced
  • 1 small onion, thinly sliced
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 1 tbsp olive oil (plus more for drizzling)
  • Salt and pepper to taste
  • 1/2 tsp red pepper flakes (optional)
  • Chopped fresh parsley for garnish


Instructions

  1. Preheat oven to 425°F.
  2. Sauté garlic in olive oil, add spinach, and cook until wilted. Season lightly.
  3. In the same skillet, caramelize the onions until soft and golden.
  4. Place flatbreads on a baking sheet. Brush lightly with olive oil.
  5. Top with spinach, chickpeas, caramelized onions, ricotta, and mozzarella. Add red pepper flakes if desired.
  6. Bake for 8–10 minutes until cheese is melted and edges are golden.
  7. Remove from oven, drizzle with olive oil, and sprinkle fresh parsley.
  8. Slice and serve warm.
