Ingredients
- 1 1/2 lbs baby potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped chives
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Wash and cut potatoes into halves or quarters.
- Toss potatoes in a bowl with olive oil and all seasonings.
- Spread potatoes on baking sheet in a single layer cut side down.
- Roast for 25–30 minutes flipping halfway through until golden and crispy.
- Sprinkle with chopped chives and serve warm.
