Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 large sweet onions (thinly sliced)
  • 2 garlic cloves (minced)
  • 1 tsp fresh thyme
  • 1 cup orzo
  • 3 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 1/2 cups Gruyère cheese (grated)
  • Salt and pepper to taste


Instructions

  1. Heat olive oil and butter in a large skillet over medium-low heat.
  2. Add sliced onions and cook for 20–25 minutes until caramelized.
  3. Stir in garlic and thyme and cook for 1–2 minutes more.
  4. Add orzo and toast for 2 minutes, stirring to coat.
  5. Pour in chicken broth and simmer for 10–12 minutes, stirring occasionally.
  6. Stir in shredded chicken and half the Gruyère cheese. Season with salt and pepper.
  7. Top with remaining cheese and broil for 2–3 minutes until golden and bubbly.
  8. Garnish with extra thyme or parsley and serve hot.
