Ingredients
- 2 tbsp olive oil
- 1 tbsp butter
- 2 large sweet onions (thinly sliced)
- 2 garlic cloves (minced)
- 1 tsp fresh thyme
- 1 cup orzo
- 3 cups chicken broth
- 2 cups cooked shredded chicken
- 1 1/2 cups Gruyère cheese (grated)
- Salt and pepper to taste
Instructions
- Heat olive oil and butter in a large skillet over medium-low heat.
- Add sliced onions and cook for 20–25 minutes until caramelized.
- Stir in garlic and thyme and cook for 1–2 minutes more.
- Add orzo and toast for 2 minutes, stirring to coat.
- Pour in chicken broth and simmer for 10–12 minutes, stirring occasionally.
- Stir in shredded chicken and half the Gruyère cheese. Season with salt and pepper.
- Top with remaining cheese and broil for 2–3 minutes until golden and bubbly.
- Garnish with extra thyme or parsley and serve hot.
