Ingredients

  • 2 puff pastry sheets, thawed
  • 1 cup cooked ham, diced
  • 1 cup fresh spinach, wilted and chopped
  • 1 cup shredded cheese (cheddar or Swiss)
  • 2 eggs (1 for filling, 1 for egg wash)
  • Salt and pepper to taste
  • Optional: 1/4 cup diced onion or 1 clove garlic, sautéed


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, cook spinach (and onion/garlic if using) until wilted. Let cool slightly.
  3. In a bowl, mix spinach, ham, cheese, one beaten egg, salt, and pepper.
  4. Roll out puff pastry and spread the filling evenly, leaving a small border.
  5. Roll up the pastry tightly and slice into 1 to 1.5-inch rounds.
  6. Place on baking sheet and brush tops with beaten egg.
  7. Bake for 20-25 minutes or until golden and puffed.
