Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/4 tsp salt
  • 3/4 cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest


Instructions

  1. Preheat oven to 350°F and line a 9×9-inch pan with parchment paper.
  2. In a bowl, mix flour, oats, sugars, and salt. Add melted butter and vanilla, stir until crumbly.
  3. Press 2/3 of the mixture into the pan and bake for 10–12 minutes.
  4. Whisk sweetened condensed milk, lemon juice, and zest until smooth.
  5. Pour filling over baked crust and spread evenly.
  6. Sprinkle reserved crumb mixture over the top.
  7. Bake for 20–25 minutes until golden and set.
  8. Cool completely, chill for 2+ hours, then slice and dust with powdered sugar.
